👩‍🍳 Preparation:

Step 1
Drain the cashews and place them in a blender. Add the plant-based milk, salt, lemon juice, nutritional yeast, cornstarch, and garlic. Blend until smooth, then heat in a saucepan over low heat until thickened.

Step 2
Spread one side of each slice of bread with vegan butter. Spread the prepared cheese on the unbreaded side of two slices.

Step 3
Cover with the second slice of bread, buttered side facing out.

Step 4
Heat a pan over medium heat and cook the sandwiches for 3-4 minutes on each side, until golden brown and crispy, and the cheese has melted.

Step 5
Cut in half, sprinkle with parsley, and serve warm.

🍽 How to Serve and Store:

Serve immediately after making the sandwiches while they're still hot and crispy. They taste best fresh, but they can be refrigerated for up to 1 day and reheated in a pan.
